Edgar’s Bistro, staffed and managed by the Helms College students and chefs, has a new summer menu that debuted July 18th. This new fare is guaranteed to keep things light and fresh on even the hottest days. After hearing from many happy patrons, here are a few of the taste-tested favorites featured on our new summer menu:
One of the best small plates to try is the ceviche. Made of sushi-quality tuna, this small plate is already a big hit with diners. Don’t miss it if when you visit Edgar’s Bistro:
Ceviche…9| diced sushi-grade tuna marinated in garlic, lime, cilantro, jalapeno and onion, topped with fresh pico de gallo
You may also want to try the shrimp and avocado wrap. Nothing says summer like fresh avocados.
Shrimp & Avocado Wrap…11 | garlic shrimp with arugula, alfalfa sprouts, avocado, ponzu and red bell pepper, wrapped in a spinach tortilla
And, of course, the double bacon cheese burger remains a crowd favorite. Topped with applewood smoked bacon and smothered in cheese.

Edgars offers a wide range of delicious entrees, appetizers, salads and specialty sandwiches that are reasonably priced. Edgars Bistro is located at 5171 Eisenhower Pkwy., in Macon. Hours of operation are: Monday through Friday from 11:00 AM – 2:00 PM and Tuesday through Friday from 6:00 PM — 9:00 PM. Edgars is also available for special events.
