The rotating lunch and dinner menu at Edgar’s Bistro, run by Helms College culinary students, brings a lot of enthusiasm on behalf of our students, chef instructors and the locals who are able try creative food prepared in exciting new ways. Located at The Polly Long Denton School of Hospitality at the Macon, GA, campus of Helms College, Edgar’s Bistro presents an opportunity for these future budding chefs to mingle with the dining public and get direct feedback on their delectable creations. It’s the perfect spot for a lunch date with friends and family as its open Monday through Friday from 11 a.m. to 2 p.m., and Tuesday through Friday from 6-9 p.m. for dinner
Students returned to class on July 18th, and with each new quarter the menu at Edgar’s rotates so that it stays fresh and seasonal. Our aspiring chefs and teaching staff collectively decide on dishes that will make it to the final lunch and dinner menus, so this is quite an opportunity to impress. Local patrons wait in anticipation to see what the student chefs will whip up next in the kitchen.
Here’s just a sample of the lunch offerings that will be available:
- Strawberry Pecan Salad: local mixed field greens tossed with toasted Georgia pecans, goat cheese crumbles, fresh sliced strawberries, and white wine vinaigrette with zinfandel balsamic glaze; add chicken or duck.
- Empanadas: Latin-influenced pastry stuffed with chorizo, rice, queso fresco, frijoles negro and cilantro, served with salsa verde & sriracha aioli.
- Farm-Raised Duck: seared and served over mushroom risotto with a warm Valencia orange glaze.
- Soft Shell Crab Sandwich: hand battered and deep-fried, served on a brioche bun with hydroponic lettuce, fresh beefsteak tomato, and a lemon remoulade sauce.

Edgar’s Bistro is a full-fledged restaurant unlike any other, and the menu offers something interesting for everyone.
